Nepal is a country that captivates the hearts of travelers with its stunning landscapes and rich cultural heritage. With the highest mountains in the world, including Mount Everest, it is a trekkers paradise. The capital city, Kathmandu, and the popular tourist destination Pokhara, offer a range of luxury hotel options for visitors.
One of our top luxury hotel choices in Kathmandu is the Hyatt Regency Kathmandu. Located close to the airport and the famous Boudhanath Stupa, this hotel offers a convenient base for exploring the city. It boasts extensive green outdoor spaces, including manicured gardens, a swimming pool, and a jogging track. The vegan food at the Hyatt Regency Kathmandu is both delicious and varied. While not all of the F&B outlets were open during our stay, we were fortunate to enjoy some off-menu items that we hope will be added to the regular menu in the future. The breakfast buffet offers plenty of vegan options, including dosas, idli, tropical fruits, salad, breads, and homemade jam. The hotel was also accommodating in providing soya milk and preparing a tofu scramble with smashed avocado and roasted carrots. The Hyatt Regency Kathmandu also serves a delectable pani puri and a mezze platter, both beautifully presented and packed with flavor.
Another luxury hotel worth mentioning is The Soaltee Kathmandu. The grand entrance and spacious lobby create a sense of calm and welcome. The Classic Heritage Rooms are well-appointed and offer a comfortable retreat after a day of exploring. The hotel features an outdoor pool and a Tranquility Spa with excellent facilities. The vegan options at The Soaltee were impressive, with perfectly steamed idli served with sambar and three delicious chutneys for breakfast. A specially created vegan lunch included pea and potato cakes served with a trio of flavorful chutneys. The vegan momos were a standout dish and deserve special recognition.
For a truly unforgettable experience, consider staying at Tiger Mountain Pokhara Lodge. This luxury lodge offers picturesque views of the verdant valley and the majestic mountains in the distance. The lodges are charming and luxurious, and the staff provides warm hospitality. The vegan food at Tiger Mountain Pokhara Lodge is exceptional. Chef Lalu and his team create delicious plant-based Nepalese cuisine using locally sourced ingredients. There is no menu; instead, guests can discuss their dietary requirements or requests with the chef upon check-in. Whether it’s grilled tomatoes and pan-fried mushrooms on toast for breakfast, a flavorful curry served with puris for lunch, or a light and nutritious trio of salads for dinner, the food at Tiger Mountain Pokhara Lodge is of the highest quality.
In addition to the luxury hotels mentioned above, Nepal offers a wide range of vegan-friendly eateries and restaurants. The people of Nepal are known for their warm hospitality, and we were blown away by the kindness and welcome we received during our trip. The country truly makes you want to return as soon as you leave.
